Claudia’s Chocolate Zucchini Muffins

Chocolate Zucchini Muffins

A patient was in for a cleaning and picked up some of our veggies from the garden, and honey we just extracted.  The next day she showed up with chocolate zucchini muffins! WOW!  Delicious!  And… kind of healthy! 🙂  We asked for the recipe and she kindly shared…

  • 2 1/4 cups freshly milled flour (hard red)
  • 1 tsp. salt
  • 1tsp. soda
  • 1 tsp. baking powder
  • 1 tsp cinnamon
  • 1/4 cup cocoa
  • 1 cup grated zucchini
  • 1/4 cup honey granules
  • 1 tsp. vanilla extract
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup oil
  • 1/2 cup honey

Measure dry ingredients into mixing bowl.  Add liquids and mix just until well blended.  Drop by spoonfuls into greased 12 cup muffin or 24 cup mini muffin pan.  An ice cream scoop works great for standard 12 cup muffin pan and a cookie scoop works great for mini muffins.  Bake at 400 for 15 min.

* Note – best flavors achieved when using fresh veggies and honey from your dentist. 😉
